Sweet Potato Hummus with Homemade Pita Chips
Yields about 3 cups
Hummus Ingredients
1 large sweet potato, baked and peeled
2 sprigs rosemary, chopped
1 tablespoon extra virgin olive oil
1 can organic chickpeas, rinsed and drained
3 tablespoons tahini
Juice of 1 lemon
1/4 teaspoon sea salt
Pinch black pepper
2 tablespoons extra virgin olive oil
1 teaspoon sweet paprika
Hummus Instructions
- Combine sweet potatoes, chickpeas, tahini, lemon juice, sea salt, and black pepper in a food processor. Blend until smooth.
- Garnish with extra virgin olive oil and sweet paprika.
- Serve with pita chips.
Pita Chip Ingredients
1 package whole wheat pita bread, cut into 8 wedges each
1/4 cup extra virgin olive oil
1/2 teaspoon ground cinnamon
1/2 teaspoon sea salt
Pita Chip Instructions
- Heat oven to 350F. Line baking sheet with parchment paper.
- Toss pita wedges with olive oil, cinnamon, and salt. Lay evenly on baking sheet; toast until golden and lightly crisped, about 10 minutes.
